Fermentation: Directly de-stemmed and pressed. Gravity cleared. Controlled temperature fermentation and aged on lees. Local yeast. Bottled after 9 months. Stabilised on cold, without filtering. Minimum sulphites before bottling.
Visual: Straw-colored with golden hints.
Nose: Mineral and citrus, honey, orange blossom, peach and mango, lemon skin and grapefruit, dried peach and secondary bouquet of ageing on lees.
Mouth: light salinity, citrus, white ripe fruit, stone ripe fruit and apricot.
