Grape harvest: Manual harvest in15 Kg boxesduring the first fortnight of October
Fermentation: Directly de-stemmed andpressed. Gravity cleared. Controlledtemperature fermenation and aged in PXbarrel on lees. Local yeast Bottled after 3years and stabilised on cold without filtering.Minimum sulphites.
Wine
Visual: amber, neat, glyceric.
Nose: Yellow fruit, peach, apricot, pear,green apple, slight carob seed scent, orangeblossom.
Mouth: well balanced, good acidity, long,delicate and fruity.
