Elaboration
Grape harvest: Manual harvest in15 Kg boxesduring the first fortnight of October
Fermentation: Directly de-stemmed and pressed. Low temperature gravity cleared. Controlled temperature fermenation and aged in PX barrel on lees. Local yeast. Bottled after 1 year and stabilised on cold without filtering. Minimum sulphites.
Wine
Visual: amber, neat, glyceric.
Nose: Yellow fruit, peach, apricot, pear,green apple, slight carob seed scent, orangeblossom.
Mouth: well balanced, good acidity, long,delicate and fruity.
